Chimichurri – Great on steak, chicken, roasted eggplant, tempeh, tofu. Try your own proportions of oil, lime juice,
salt, and garlic to get a sauce you love!
Approximately 2 cups fresh cilantro and/or parsley, firmly packed
1/4 cup fresh oregano leaves (optional)
3-6 cloves of garlic
2 tablespoons chopped onion
1/2 cup olive oil
2 tablespoons red wine vinegar (optional)
1 tablespoon lime juice (optional)
Salt and red pepper flakes to taste
Blend all ingredients in a food processor or blender. Add extra water, oil or lime juice if you need liquid to blend.
Taste for seasoning. Cilantro is also great in fresh salsa, and with a variety of Mexican and Chinese dishes!
