    Happy Holidays, CSA members! The final week of the Fall season is here, Week 13. As I was wrapping presents this week, it occurred to me how opening up a CSA share is kind of like receiving a gift each week. A shiny green box arrives, you unfold the flaps, and peek inside to discover what mix of colorful fruits and veggies await. Thank you for gifting yourself, or maybe even someone you care about, a CSA membership this season. We hope it felt a little bit like getting a present each week to you, too.

    This week you’ll find a treat in your box that lets you enjoy one of Fall’s signature flavors into the coming months – Roselle Hibiscus Loose Leaf Tea! For a version thats perfect for the winter season try it Caribbean style, also known as Sorrel Tea. It’s ruby red-hued with a warming spiced flavor. Sorrel is a traditional drink in Jamaica and is often served up during the holidays. Try it hot on cold days, or ice it down if you prefer it as a refresher. You can even add rum or alcohol to make a cocktail. Find how to make it in the recipes below.

    This week you’ll also find an Indian inspired recipe for enjoying those flavor packed mustard greens. With a consistency like a creamy thin paste, this would be ideal with rice or roti and gives you an alternative to the go-to sautés. Instead of spinach, I modified this recipe to use seasonal braising mix or collards. You can dial the heat up or down by adjusting the use of the red chile peppers.

    Last but not least, dessert. When searching for holiday recipes, I came across an old civil war period recipe for green tomato cake. Similar to a coffee or spice cake, it intrigued me to find green tomatoes in it! While this week’s recipe is made for modern times, I’m excited to bake it up and imagine what it would have been like to use veggies creatively in leaner ones.

    THIS WEEK’S RECIPES

    Sorrel Tea

    Ingredients

    • 2 cups dried roselle hibiscus
    • 1/2 cups fresh chopped ginger (no need to peel or grate, but do pound or smash open)
    • 6 whole cloves
    • 2 cinnamon sticks
    • 1 teaspoon allspice berries
    • 2 cardamom pods (lightly crushed)
    • 1 cup turbinado sugar or brown sugar (alternative sweeteners like cane syrup or honey can also be used)
    • grated zest or peels from 1 small lime
    • grated zest or peels & juice from 1 medium lemon
    • 2 quarts of water

    Instructions

    1. In a large stockpot combine the roselle, ginger, cloves, cinnamon sticks, allspice berries, cardamom, and sugar.
    2. Cover with 2 quarts of water and stir well to combine.
    3. Bring to a boil over medium heat. Once boiling, remove from heat and add citrus zests, peels & lemon juice. Stir well.
    4. Cover with a lid and steep for at least two hours or longer for a deeper flavor.
    5. Strain tea over fine-meshed sieve and into a jar/pitcher of your choice. (makes 2 quarts)
    6. Enjoy hot or store in fridge with a tight-fitting lid. If storing, leave room at top for shaking before serving later.
    Indian Mustard Greens (Sarson Ka Saag)

    Ingredients

    • 2 large dried red chile peppers (optional)
    • 2 bunches of collards or braising mix
    • 1 bunch of mustard greens
    • 2 tablespoons of ghee
    • 1/2 teaspoon cumin seeds
    • 1/4 cup finely chopped onion
    • 1/2 teaspoon ginger paste
    • 2 teaspoons garlic paste
    • 1/2 tomato, chopped
    • salt to taste
    • 1/2 teaspoon white sugar, or to taste
    • 1/4 cup water

    Instructions

    1. Place the chiles into a dry skillet over medium heat, and cook and stir until the chiles turn dark red-brown in color and give off their fragrance, 1 to 2 minutes. Remove from heat, allow to cool, and remove stems of chiles; shake out the seeds, and tear the flesh of the roasted chiles into pieces. Set aside.

    2. Place the spinach into a saucepan over medium heat; place mustard greens into a separate saucepan. If leaves are dry, mix in 1 or 2 of tablespoons of water. If leaves are still wet, just cover the pans and simmer the greens until tender, about 10 minutes. Allow to cool.

    3. Place greens together into the work bowl of a food processor, and pulse several times to break up the greens, then process to a paste, about 1 minute.

    4. Heat ghee in a large saucepan over medium heat, and stir in the cumin seeds, stirring for about 30 seconds or until the seeds sizzle and turn a darker brown color. Mix in the onion, cook and stir until lightly browned, about 3 minutes, and mix in the roasted peppers, ginger paste, garlic paste, and tomato. Mix in the pureed greens, bring to a simmer, and stir in salt and sugar to taste. If dish is too thick, mix in up to about 1/4 cup of water, 1 tablespoon at a time, until the greens are the desired thickness.

    Green Tomato Cake

    Ingredients

    For the cake

    • 4 cups green tomatoes
    • ½ cup vegetable oil
    • 2 cups white sugar
    • 2 cups eggs
    • 2 cups all-purpose flour
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground nutmeg
    • ¼ teaspoon salt
    • 1 cup chopped walnuts

    For the cream cheese frosting

    • 8 ounces cream cheese
    • 3 ½ cups confectioners powdered sugar
    • 1 teaspoon vanilla
    • 1 tablespoon milk

    Instructions

    1. Grease a 9×13 baking pan. 
    2. Chop 4 cups green tomatoes (no need to peel or drain!)
    3. Make the batter by first mixing together the vegetable oil, sugar and eggs. In another bowl mix flour, cinnamon, nutmeg, baking soda, salt and chopped walnuts. Mix these 2 bowls together. 
    4. Add in green tomatoes (and juices) and mix. 
    5. Pour mixture in baking pan.
    6. Bake around 40-45 minutes or until a toothpick comes out clean. 
    7. Allow to cool. While the cake is cooling, make the cream cheese frosting using cream cheese, powdered sugar, vanilla and milk. 
    8. Once the cake is cool, frost the cake. Then, slice & enjoy!

  • CSA 2023 – Winter Week 3

    We persevered through another round of below freezing temps this past weekend. The snow peas were once again covered with cloth, and the hardier crops showed their strength. We were able to provide the chinese broccoli to some members, until we picked every piece on the farm! We will otherwise be harvesting the following produce in your CSA shares this week:

    • Baby Bok Choy
    • Chinese Broccoli, Gai Lan (eat the stems and leaves too!) or baby cabbage
    • Baby Carrots
    • Collard Greens
    • Purple Kohlrabi
    • Snow Peas
    • Parsley – FSO or WF
    • Fresh Turmeric
    • Fingerling Sweet Potato Mix (Murasaki, Bonita and Yams)
    • Slicer Tomatoes – WF

    Coconut Curried Braised Collard Greens – Food Fidelity

    Ingredients

    • 1 medium yellow onion sliced
    • 1 tablespoon coconut oil
    • 4 cloves garlic diced
    • 1 inch fresh ginger diced
    • 2 fresh thyme stems
    • 1 habanero chile whole (I used jalapeno)
    • 1 tablespoon curry powder
    • ½ tablespoon turmeric (I used fresh 1 1/2 piece fresh grated turmeric root)
    • ½ tablespoon smoked paprika
    • ½ tablespoon kosher salt
    • ½ tablespoon black pepper
    • 1 can coconut milk
    • ¼ cup vegetable stock
    • 1 bunch collard greens cleaned, de-stemmed and cut into strips

    Instructions

    1. Heat oil in medium skillet on medium heat. Add onions and saute until translucent (3-4 minutes)
    2. Add garlic and ginger and saute for another minute, stirring as needed.
    3. Using the tip of a sharp knife, add small slits into the sides of the habanero chili. Add it along with the thyme, stock, and coconut milk. Let simmer 4-5 minutes.
    4. Add spices and mix well. Let simmer for additional minutes (2-3).
    5. Remove the chili. Add the greens and mix well. Cover the skillet and let the greens simmer 15-20 minutes. Stir occasionally. I like these greens with some crunch, so if you prefer softer let them cook a little longer.
    6. Finish with a squeeze of fresh lime juice.

    Golden Relish – Very Vegan Val

    Ingredients

    • 3 oz. fresh turmeric root (individual share members receive appx 4 oz portion)
    • 1 granny smith apple
    • ½ medium-sized onion
    • 3 cloves garlic
    • 1 lemon
    • 2 tsp. white or apple cider vinegar
    • 1 tsp. salt
    • ½ tsp. black pepper

    Instructions

    Grate the turmeric, apple, and onion, and place in a mixing bowl. Mince the garlic and add to the bowl. Top off with the juice from the lemon, vinegar, salt, and pepper. Mix well, and adjust to taste. For best flavor let sit in the fridge for 24 hours, to allow the flavors to meld and soften.

    Let your relish marinate in the fridge for a day or so, to let the flavors soften and meld. It will stay good in the fridge for quite a while. Add a little relish to everything- veggie dogs, sandwiches, crackers, chips, toasts, add a spoonful to the top of your hummus, serve with pierogi, top baked potatoes, and more!

    Sweet Potato and Kohlrabi Fritters with Yogurt-Tahini Sauce- Jessica in the Kitchen

    Ingredients

    FRITTERS:

    • 1/2 large sweet potato
    • 1 kohlrabi
    • 1 1/2 teaspoons sea salt
    • 1 1/2 teaspoons ground black pepper
    • 1/2 teaspoon garlic powder
    • 1 flax egg
    • 1/4 cup coconut oil

    YOGURT-TAHINI SAUCE:

    • 1/2 cup greek yogurt
    • 2 teaspoons honey
    • 1 tablespoon tahini sauce
    • 1/2 teaspoon sea salt
    • 1/2 teaspoon ground black pepper
    • Chopped parsley, for garnish (optional)

    Instructions

    YOGURT-TAHINI SAUCE

    1. Mix all ingredients together with a whisk. Store in fridge until ready.

    FRITTERS

    1. Preheat oven to 450 degrees Fahrenheit.
    2. Poke holes in the sweet potato with a fork and bake at 25 minutes until almost cooked through and much softer. Allow to cool and peel skin off.
    3. Cut the kohlrabi in half, and then peel kohlrabi’s outer layer. Using a mandolin with a guard, julienne the kohlrabi until it resembles carrot sticks.
    4. In a food processor, mix in all the ingredients (except the coconut oil) including the flax egg and pulse slightly until combined (but not pureed together).
    5. Heat coconut oil in a large skillet over high heat. Whilst heating, form kohlrabi sweet potato mixture into fritter patties (I was able to make 6 fritters). Place in hot coconut and reduce heat to medium high, and cook on each side for 5 minutes until golden brown. They are delicate, so be careful not to break them.
    6. When cooked through, place on a paper towel in a plate to absorb excess oil.
    7. Serve with Yogurt-Tahini Sauce and top with chopped parsley.

    Ingredients
    Instructions
    1. Rinse the bok choy with cold water, drained. Cut and remove the lower part of the bok choy stems. Cut the (bigger) leaves lengthwise to halves. Set aside.
    2. Heat up a wok or pan on high heat. Add the oil until heated, then add the garlic and stir-fry until aromatic. Add the mushroom, do a few quick stirs before adding the bok choy. Add salt and continue to stir fry until the leaves are wilted but the stems remain crisp. Turn off the heat and serve immediately.

    Chipotle-Roasted Baby Carrots – from foodandwine.com

    Ingredients
    • 30 thin baby carrots (2 to 3 bunches), tops discarded, carrots scrubbed
    • 2 chipotle chiles in adobo, minced, plus 1 teaspoon of adobo sauce from the can 
    • 1 tablespoon unsulfured molasses
    • 2 1/2 tablespoons extra-virgin olive oil 
    • Kosher salt
    • Freshly ground pepper
    • 3 tablespoons sesame seeds
    • 4 ounces watercress, stems discarded
    • Plain Greek yogurt, for serving 
    Instructions
    1. Preheat the oven to 350°. Toss the carrots on a rimmed baking sheet with the chipotles, molasses and 2 tablespoons of the olive oil; season with salt and pepper. Roast for 30 to 35 minutes, until the carrots are crisp-tender and browned. Transfer the carrots to a plate and let them cool completely.
    2. Meanwhile, in a skillet, toast the sesame seeds over moderate heat, tossing, until golden, 3 to 5 minutes. Stir in the remaining 1/2 tablespoon of olive oil and season with salt; let cool.
    3. On the plate, toss the carrots with the 1 teaspoon of adobo sauce. Arrange the carrots on 6 plates and scatter the watercress on top. Garnish with the sesame seeds and serve with yogurt.
  • Spring 2021 – Week 1

    Welcome to the first week of the 2021 Spring CSA Season! Members will enjoy the following items from our farm and partner producers in their shares:

    • Beans, Green – Big Daddy’s Organic Farm
    • Bok Choy, baby, bunch – wash and roast whole, or cut off the end and sauté leaves
    • Carrots, baby, loose (no tops)
    • Dill, bunch
    • Red Romaine Lettuce
    • Sweet Onions, bunch – use the tops as well, like you would scallions!
    • Bonita Sweet Potato Yams – Sweet and creamy, white-fleshed sweet potatoes.
    • Fresh Turmeric Root

    Lately, I’ve been trying to incorporate fresh turmeric in every dinner meal. Last night, I blanched some green beans for one minute, to keep their crunch, and tossed in a marinade of finely chopped – or grated if that’s easier – 1 inch piece of turmeric root and 1 garlic clove, a splash of good balsamic and olive oil, salt and fresh ground black pepper. The turmeric gave a lovely earthy kick, and balanced nicely with the sweet balsamic. Thinly sliced sweet onion would be a great substitute for the garlic. Thanks for being a part of Frog Song.     Miso Glazed Roasted Kohlrabi – from Mealz.com

    Ingredients
    • 1 Kohlrabi
    • 1 tbsp of organic miso
    • 2 tbsp rapeseed oil
    • 1 tbsp organic tamari
    • 1 tbsp sesame seed oil
    • 1 tsp coconut oil
    Directions
    1. Trim leafy greens of kohlrabi and reserve for later. Peel outer skin of kohlrabi.
    2. Discard tough skin and chop kohlrabi into one inch pieces.
    3. Mix glaze ingredients together in a bowl, add kohlrabi, and coat mixture with your hands.
    4. Spread evenly over a baking tray and roast in a preheated oven at 350 degrees for 30 minutes, checking and turning after 20 minutes.
    5. During the last ten minutes of the kohlrabi’s cooking, quickly steamfry the kohlrabi leaves in a saucepan using oil of your choice, adding a touch of water to aid in the process.
    6. Remove kohlrabi from the oven, and transfer to a bowl and combine with the greens.

    Turmeric Honey Glazed Carrots – from LakesideTable

    Ingredients
    • 8 medium carrots peeled and cut into wide match sticks
    • 3 tablespoons butter
    • 1 teaspoon salt
    • 2 teaspoons turmeric (1 inch piece grated, if using fresh turmeric)
    • 1 teaspoon fresh ground pepper
    • 1/3 cup honey
    • 1 inch ginger peeled and grated
    • 1/2 lemon zested and squeezed
    • 1/3 cup fresh parsley chopped
    Directions
    1. Melt butter over low to medium heat in a skillet.
    2. Put carrots into skillet and coat with butter and add salt.
    3. Gently saute for 2 minutes and add the turmeric, black pepper, honey, and ginger.
    4. Increase heat to medium high for 3 more minutes.
    5. Remove from heat, top with lemon zest, lemon juice and parsley.
    6. Serve and enjoy!

    Sweet Onion Salad Dressing – from Spruce Eats

    Ingredients
    • 1 cup sugar
    • 1 teaspoon salt
    • 1/4 teaspoon dry mustard
    • 1/4 teaspoon celery seed
    • 1 medium Vidalia onion, grated, or other sweet onion
    • 2 tablespoons vegetable oil
    • 1/2 cup vinegar
    Directions
    1. In a saucepan, combine sugar, salt, mustard, and celery seed
    2. Add grated sweet onion, oil, and vinegar. Heat until sugar is melted.
    3. Cool and refrigerate, or serve as a warm dressing.

    Makes about 1 1/2 cups.
