    Roasted Fennel and Snow Pea Salad

    Ingredients:

    • 1 lb fresh fennel
    • 3 tbsp olive oil
    • sea salt
    • ground black pepper
    • 1 lemon
    • 2 tbsp pumpkin seeds or sunflower seeds, toasted
    • 5 oz. snow peas

    Instructions:

    1. Preheat the oven to 450°F (225°C).
    2. Cut the stalks and fronds off the fennel. Then cut the fennel bulb into small wedges. Arrange in a baking dish. Drizzle olive oil on top. Salt and pepper to taste.
    3. Cut the lemon in half and squeeze out the juice and save for something else. Cut the lemon rind into thin wedges and place around the fennel (oven-baked lemon gives a lovely flavor but you don’t have to eat them if you don’t want).
    4. Bake in the oven for 20–30 minutes or until the fennel has turned a nice golden color.
    5. While the fennel is baking, place the pumpkin seeds in a dry frying pan and toast over medium heat for a few minutes until browned but not burnt.
    6. Mix the roasted fennel with raw shredded snow peas and the dry toasted pumpkin seeds. Plate and serve with fish, chicken or meat.

  • Spiced Coconut Vegetables

    A simple vegan delight!

    Ingredients

    1 tbs coconut oil

    1 tbs fresh minced ginger

    1 small pepper, diced

    1 tsp ground Turmeric

    1 tsp ground Coriander

    1 cup sliced carrots

    1 tbs cane syrup

    1 cup chopped broccoli

    1 cup fresh green beans

    1 cup diced potato

    1 tbs chopped basil

    1/3 cup chopped cashew

    Directions

    1. Heat coconut oil in large pan over medium height. Add seasonings and sauté for 3-5 minutes.
    2. Add vegetables, cook for 8-10 minutes
    3. Add coconut milk and maple syrup, bringing to a simmer.
    4. Bring in the cashew, simmer for 3 to 4 minutes.
    5. Remove from heat and garnish.

    Sweet Pepper Mix – Little Pond Farm

    This week’s CSA share brings a rainbow of tasty nourishing items. First, the sweetest of the sweet, our white fleshed bonita sweet potatoes. These hardy tubers are delicious roasted with honey, cinnamon, and a pinch of salt and thyme. Add grated turmeric or galangal to step up the flavor and nutrition.

    Spring abundance is on full display with bok choy, chard, red butter lettuce, snow peas, and scallions. Enjoy our greens lightly sautéed or raw in salads. Add radishes for much more than flavor: they’re great at detoxifying the body as well as a host of other benefits. One satisfying crunch will help purify your blood and increase oxygen into your bloodstream. Raw radishes a bit much for your palette? We hear you. Here’s a tip: wash and salt the radish before steaming or baking for around 10 minutes. That should do the trick, less bitter, more spice.

    Turmeric is also one of nature’s best healers. Curcumin is what makes it a “functional food,” with health benefits far beyond basic nutrition.     Mushroom, Tomato, and Scallion Frittata – adapted from delish.com

    Ingredients:
    2 tbsp. olive oil
    12 scallions
    1/2 lb. shiitake mushrooms (can substitute other varieties)
    1 cup cherry tomatoes
    Salt and Pepper to taste
    8 eggs
    1/2 c. grated Parmesan cheese

    Instructions:
    1. Preheat oven to 350 degrees. Heat olive oil in a over medium heat. Add scallions, mushrooms, and 1/2 teaspoon salt; cover, and cook until the vegetables are very soft, about 15 minutes.
    2. In a large bowl, whisk together eggs and 1/4 teaspoon each salt and pepper. Pour egg mixture over the vegetables, add tomatoes, and stir for 2-4 minutes.
    3. Sprinkle cheese over the frittata, and bake in the oven for 15 minutes.

    Chinese Scallion Pancakes

    Ingredients:
    3 scallions—2 minced, 1 thinly sliced
    1 tablespoon plus 1 teaspoon toasted sesame oil
    1/2 teaspoon kosher salt
    1/2 pound of pizza dough, at room temperature
    2 tablespoons soy sauce
    1 tablespoon water
    2 teaspoons unseasoned rice vinegar
    1/2 cup canola oil

    Instructions:
    1. In a small bowl, mix the minced scallions with 1 tablespoon of the sesame oil and the salt.
    2. Cut the dough in half and roll out each piece to a 10-by-6-inch rectangle.
    3. Spread the scallion mixture over the dough, leaving a 1/2-inch border all around. Starting at a long edge, roll up each piece of dough and pinch to seal. Coil each roll of dough into a round and tuck the end under the coil. Cover and let stand for 15 minutes.
    4. In a bowl, mix the sliced scallion with the remaining 1 teaspoon of sesame oil and the soy sauce, water and vinegar.
    5. With a large, heavy rolling pin, roll out each dough coil into an 8-inch round. (It’s okay if some of the scallion mixture comes out; it will stick to the dough as you roll.)
    6. In a large skillet, heat the canola oil until shimmering. Fry one pancake at a time over moderately high heat, turning once, until golden, about 3 minutes total. Drain on paper towels. Cut the pancakes into quarters and serve with the soy dipping sauce.

    Roasted White Sweet Potatoes with Honey Cinnamon Glaze – adapted from nutmegnanny.com

    Ingredients:

    4 white sweet potatoes, scrubbed clean and cubed
    1/4 cup honey
    1/4 cup olive oil
    2 teaspoons fresh thyme leaves
    2 teaspoons cinnamon
    Kosher salt, to taste
    Black pepper, to taste

     Instructions:

    1. Preheat oven to 350 degrees and line a rimmed baking sheet with parchment paper, set aside.
    2. In a large bowl add cubed sweet potatoes and add in honey, olive oil, fresh thyme leaves, cinnamon, kosher salt, and black pepper.
    3. Stir to combine.
    4. Add to your prepared rimming baking sheet and roast for 25-30 minutes, stirring every 10 minutes.

    Cilantro: supposedly you either love it or hate it. Haters, it’s probably not your fault. A cilantro aversion is genetic and affects around 10% of the world’s population. The good news: crushing the leaves before using might make it more palatable. Even better news: there’s hope for the anti-cilantro crowd! A positive cilantro experience can produce a psychological change, turning the averse into enthusiasts. 

    If you’re Team Cilantro like us, you’ll love the new twist on a classic cocktail we’re sharing below. For the other camp… Well, enjoying this drink with your nearest and dearest might just change how you feel about this herb. Muddle away, and bottoms up – salud! 

    This week’s CSA share also includes broccoli. Really, the best way to enjoy our broccoli is to keep it simple. Each floret is packed with full-bodied flavor, and we want you to savor each bite with the same love in which it was grown. Did you know that you can eat the leaves too?     Spicy Cilantro Margarita 

    Ingredients:

    • 1 jalapeño
    • 1/4 cup lightly packed cilantro
    • 1/4 cup lightly packed mint
    • One 750-milliliter bottle silver tequila
    • 2 cups fresh lime juice
    • 1 cup light agave nectar (you can also substitute with Frog Song cane syrup!)
    • 1/2 cup fresh orange juice
    • Ice, lime wedges and kosher salt, for serving

    Instructions:

    Muddle the jalapeño, cilantro, and mint. Add the tequila, lime juice, agave and orange juice and stir well. Refrigerate until well chilled, about 1 hour. Using a fine-mesh sieve, remove and discard the solids from the mixture. Serve ice and lime wedges alongside, as well as salt for rimming glasses.

    Ají Verde (Peruvian-Style Green Sauce) – adapted from foodandwine.com

    Ingredients:

    • 1/2 cup mayonnaise
    • 2 tablespoons fresh lime juice (from 2 small limes)
    • 1 large bunch fresh cilantro, trimmed, leaves and stems coarsely chopped (about 2 packed cups)
    • 1 medium garlic clove, coarsely chopped
    • 5 scallions, coarsely chopped
    • 1/4 cup chopped fresh mint
    • 1 tablespoon seeded and coarsely chopped serrano or jalapeño chile
    • 1/4 teaspoon kosher salt

    Instructions:

    Place all ingredients in a blender. Process on low, gradually increasing speed, until smooth, about 1 minute. Cover and chill sauce at least 1 hour before serving. This allows flavors to meld and mellow out.

    Sauce can be stored in an airtight container in the refrigerator for up to 3 days. It’s delicious with our organic chicken or roasted vegetables. It can also be thinned with lemon juice and olive oil for a creamy salad dressing.

    Caramelized Ginger Turmeric Snow Peas – adapted from overlindulgence.com

    Ingredients:

    • Snow peas
    • Fresh ginger root (to taste)
    • Fresh turmeric (to taste)
    • Splash of heavy cream
    • 1 tbsp. butter or olive oil

    Instructions:

    1. Wash peas and trim stems.
    2. Heat butter or oil in a pan, and melted, add peas.
    3. Sauté on medium/low for about 10 minutes or until the peas start to caramelize. Stir intermittently.
    4. Grate ginger and turmeric into pan. Sauté an additional 5-8 minutes.
    5. At the very end, turn the heat to low, and add a little splash of cream. Stir to quickly combine.
    6. Plate, devour, and enjoy!

    Frog Song’s Farm Slaw

    Ingredients:

    • Napa cabbage
    • Radish mix 
    • Broccoli leaves
    • Lemon juice
    • Olive oil
    • Frog Song cane syrup
    • Sea salt

    Instructions:

    1. Finely chop or shred cabbage, radishes, and broccoli leaves using a food processor or knife
    2. Add veggies to a large bowl. Dress with a splash of lemon juice, olive oil, cane syrup, and sea salt in a large bowl.
    3. Mix well and and enjoy!

    Chili Roasted Carrots with Avocado Cilantro Dressing – May I Have That Recipe

    Ingredients
    • 10 medium-large sized carrots
    • 3 tbsp Extra Virgin Olive Oil
    • ½ tsp salt
    • 1 tbsp prepared chili powder
    • Avocado Cilantro Dressing
    Instructions
    1. Pre-heat oven to 400F
    2. Cut carrots in half lengthwise, and cut each half in 2-3 pieces depending on the thickness ensuring all the pieces are similar in size and thickness
    3. Place carrots in a large bowl and add olive oil, salt, and chili powder
    4. Mix well until all the carrots are well coated with the olive oil and the spices
    5. Bake for 35 minutes or until tender
    6. Drizzle Avocado Cilantro Dressing right before serving

    Avocado Cilantro Dressing

    Ingredients
    • 2 cups packed cilantro leaves
    • 1 large Hass avocado
    • 4 tbsp freshly squeezed lemon or lime juice
    • ½ tsp salt
    • ½ tsp ground cumin
    • ¼-½ cup water
    • 1 tbsp Extra Virgin Olive Oil
    Instructions:
    1. Cut avocado in half, carefully remove the pit and remove the skin
    2. Put avocado, cilantro, lemon or lime juice, salt, cumin, olive oil and ¼ cup water in a food processor or blender
    3.  Blend until smooth and creamy. Add more water to achieve desired consistency.
    4. Store in a container in fridge

    Sesame Kale – Budget Bytes

    Ingredients
    • 1 bunch lacinato kale 
    • 1 Tbsp cooking oil 
    • 2 cloves garlic 
    • 1 Tbsp soy sauce 
    • 1 tsp toasted sesame oil
    • 1 Tbsp sesame seeds
    Instructions
    1. Remove the woody stems from the kale leaves either by slicing down each side with a sharp knife, or by pinching the leaf at the base and pulling out toward the tip. Stack the leaves and then slice crosswise into one inch wide strips. Wash the leaves well in a colander with cool running water.
    2. Mince the of garlic and add it to a large pot with one tablespoon of neutral cooking oil (or your favorite cooking oil). Sauté the garlic for about one minute over medium heat.
    3. Add the washed kale leaves to the pot. Stir and cook the kale until it is wilted and glossy (about 5 minutes). If you prefer a more tender leaf, cook longer.
    4. Add the soy sauce, toasted sesame oil, and sesame seeds to the pot. Stir to coat. Taste and adjust the seasoning to your liking. Serve warm.

    Radish Carrot Cilantro Salad – Taste of Home

    Ingredients
    • 1-1/2 pounds radishes, very thinly sliced
    • 1-1/2 pounds medium carrots, thinly sliced
    • 6 green onions, chopped
    • 1/4 cup coarsely chopped fresh cilantro

    Dressing

    •  teaspoon grated lemon zest
    • 1 teaspoon grated orange zest
    • 3 tablespoons lemon juice
    • 3 tablespoons orange juice
    • 2 tablespoons extra virgin olive oil
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    Instructions
    1. In a large bowl, combine radishes, carrots, onions and cilantro. In a small bowl, whisk dressing ingredients until blended. Pour over salad; toss to coat. Refrigerate, covered, at least 1 hour before serving.

    Easy Roasted Bok Choy – Two Kooks in the Kitchen

    Ingredients
    • 1 pound baby or sprout bok choy (about 14 pieces)
    • 1/2 pound broccoli (1/2 head)
    • 2 tablespoon olive oil (or vegetable oil)
    • 1/4 teaspoon garlic powder (or 1 clove finely minced)
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • optional: 1/2 tsp red chili flakes or red pepper flakes
    Instructions
    • Heat oven to 450F/232C. Line a large baking sheet with foil and spray with cooking spray/oil. Parchment paper is fine too if it can withstand a very high heat.
    • PREPARE BOK CHOY AND BROCCOLI: Cut 1/2 inch/1.27 cm off white bult ends of boy choy. Separate stems (or cut baby bok choy in half lengthwise if using regular bok choy). Tear off any partial leaves that are wilted or brown. If adding broccoli, cut stems off and cut florets in half or into smaller pieces.
    • MIX WITH SEASONINGS: Lay bok choy and broccoli in a single layer on pan. Drizzle with oil. Sprinkle with garlic powder, salt and pepper and red pepper flakes (if using). Toss with hands to coat veggies evenly and spread out in single layer. 
    • ROAST, DRIZZLE AND SERVE: Roast for 6 minutes or until slightly browning. If you prefer more char or caramelization, continue roasting another 4-5 minutes, but vegetables will be softer. Remove from oven. Transfer to platter. Drizzle with balsamic reduction and sprinkle with toasted sesame seeds. Garnish with lemon juice or zest if desired. 

    Watermelon Radish Pickles – Boulder Locavore

    Ingredients
    • 3 large Watermelon Radishes should yield 3 cups when chopped up
    • 1 small Onion for this recipe I used a Spanish onion plus 2 itty bitty Cippolini onions I had
    • 1 ½ cups Rice Vinegar
    • 2 ½ teaspoon Kosher Salt
    • 3 ½ tablespoon Granulated Sugar I use organic cane sugar or turbinado sugar but any will do
    • ¾ teaspoon Brown Sugar
    Instructions
    1. Cut the ends off of the radishes, peel and cut them into sticks (you can do a different type of chop but I like the look and versatility of the sticks).  NOTE: I cut slices about 1/4 inch thick and then cut that into sticks about 1/4 inch wide.
    2. Cut the onion into 1/8 inch thick slices using a knife or mandoline.Cut each slice in half and separate into half circle pieces.  Combine the radishes and onion in a bowl and toss to mix together.
    3. In a separate bowl mix together the rice vinegar, salt and sugars, stirring to combine until salt and sugar dissolve fully.
    4. Fill the jars you’ve selected with the radishes and onion.  Pour the liquid mixture into the jars leaving about ½ inch at the top.  Add lids; turn upside down and upright again a few time to ensure everything is mixed together and place in the refrigerator.
    5. The pickled radishes can be eaten as early as after soaking overnight but realistically to get the flavor I like to leave them at least a week.  Since they are refrigerator pickles they are not intended for long shelf life.  I probably would not keep them after 3 months (but mine have never lasted that long).

    Lacinato Kale Pesto – Elle Republic

    Ingredients

    • 12 Lacinato kale leaves, ribs removed
    • 3 cloves garlic
    • 3 tbsp pine nuts (lightly roasted, if desired)
    • 1/2 teaspoon finely grated lemon zest
    • 2/3 cup grated parmesan (65 g)
    • 1/4 cup extra-virgin olive oil, or more as needed (4-5 tablespoons)
    • sea salt & freshly ground pepper, to taste
    Instructions
    1. Bring a pot of water to a boil and blanch the kale for 2 minutes.
    2. Strain and plunge kale into an bowl of ice cold water. Drain kale and squeeze excess water from it.
    3. In a food processor, combine garlic and pine nuts, lemon zest, chili (if using) and grind to a coarse paste.
    4. Add Parmesan and kale and blend until smooth.
    5. With motor still running, slowly drizzle in olive oil and season with salt and pepper.
    6. Eat immediately or store in a glass jar in the fridge for about 4 days. Store pesto airtight in the refrigerator with a thin layer of olive oil over top to avoid oxidation and preserve that vibrant green color.
