    Roasted Roots With Green Salsa

    Ingredients:

    • 3 medium sweet potatoes (about 2 lb.), scrubbed, cut into ½”-thick wedges
    • 8 small carrots with tops (about 1 lb.), tops reserved, scrubbed
    • 5 scallions, roots trimmed
    • 1 Tbsp. extra-virgin olive oil, plus more for drizzling
    • Kosher salt, freshly ground pepper
    • 8oz. tomatillos (about 5), husks removed, rinsed, coarsely chopped (about 2 cups)
    • 1–2 green chiles (such as serrano or jalapeño), finely chopped
    • ¼ cup fresh lime juice
    • Cotija cheese, ricotta salata (salted dry ricotta), or feta (for serving)

    Instructions:

    1. Place a rack in lower third of oven; preheat to 450°. Place sweet potatoes, carrots, and scallions on a baking sheet. Drizzle a little oil over, season with salt and pepper, and toss to coat. Divide vegetables between 2 baking sheets if cramped and spread out into an even layer. Roast until tender and browned, 15–25 minutes.
    2. Meanwhile, coarsely chop reserved carrot tops (you want about ½ cup) and place in a medium bowl. Add tomatillos, chiles, lime juice, and remaining 1 Tbsp. oil. Season salsa with salt and pepper and stir to combine (it will loosen as it sits).
    3. Cut charred scallions into small pieces, add to salsa, and stir to combine. Divide sweet potatoes and carrots among plates and top with salsa and lots of cheese.

    Phytonutrients: a picture of health

    Long sunny days help give this week’s CSA box its vibrant yellows, greens, reds, and purples. It paints a perfect picture of health: all those colors mean we get the full range of nutrients we need to thrive. What’s even better is that we harvest your fruits and veggies at the peak of ripeness when our crops are the densest with nutrients. But how does it translate to health? Here’s a snapshot of the benefits we reap by “eating the rainbow”:

    Blue/purple: veggies like the red onions in your CSA share are a boost for the urinary tract, memory function, and healthy aging.

    Yellow/orange: the peaches, corn, and yellow beans tucked inside your box are also loaded with vitamin C, vitamin A and potassium. This supports our immune system and can help with vision.

    Red: these fruits and vegetables are packed with vitamin C, vitamin A, potassium and antioxidants. The reds can reduce cancer and stroke risk, plus help our brain, skin, heart, and prostrate do their jobs.

    White: Ok, so technically white isn’t a color, but out bodies need those onions, potatoes, and other white fruits and veggies, too! They help control cholesterol and blood pressure levels, among other benefits.

    Green: Dark green, leafy vegetables like this week’s rainbow chard win the prize for antioxidants and fiber content. They’re also chock full of potassium and vitamin K that nurture our bones, teeth, and heart. What’s not to love?

    Recipes

    French Onion Tart – adapted from newyorktimes.com

    Ingredients:

    • 2 cups all-purpose flour
    • Pinch of kosher salt
    • ½ cup unsalted butter (1 stick), cut into thumbnail cubes
    • ½ cup ice-cold water
    • 1 pound sweet onions
    • 2 tablespoons FSO lard
    • 1 large egg
    • ½ cup heavy cream
    • Freshly ground black pepper
    • Freshly grated nutmeg

    Instructions:

    1. Use a pastry knife to blend flour, salt, and butter to a coarse meal consistency.
    2. Make a well in the center of the mixture and pour ice-cold water into the well.
    3. Using a flexible dough scraper, bring the dough together by folding and pressing. Be firm and brisk to form into a neat disk, trying to avoid using your hands or too much kneading. Refrigerate dough for 30 minutes. Heat the oven to 375 degrees.
    4. Halve the onions, peel, and create julienne slices rather than half moons.
    5. In a wide sauté pan over medium-low heat, melt the lard and slowly sweat the onions until caramelized, usually approx. 25 minutes. Let them soften to translucent and allow the sugars they contain to start to brown in the pan. The result should be soft, sweet and evenly browned onions. Set onions aside to cool.
    6. Roll dough out to a ¼-inch-thick round, and drape over a round 10-inch fluted false-bottom tart pan. Lay dough into the pan, gently pressing into the bottom, and roll the pin across the pan to cut off the excess dough. Use your fingers to press the edges into the flutes, accentuating the shape of the dough edge. Dock the bottom of the dough with the tines of a fork, weight the pastry with beans or weight and blind-bake for 25 minutes.
    7. In a bowl, beat the egg with the cream. Stir in the caramelized onions. Season with pepper, nutmeg and salt to taste. Stir well, and make sure the onions are all evenly coated with the custard.
    8. Remove tart shell from oven, and slip it onto a baking sheet. Remove weights, fill with the onion-custard mixture and distribute it evenly. Return tart to oven on the sheet, and bake for 25 minutes, or until custard has set, the tops of the onions start to achieve a deeper brown and the dough is dark golden brown at the edges.
    9. Remove from the ring, and allow to cool just a few minutes on the rack, so that the piping hot tart shell can kind of tighten up enough to be sliced with a sharp chef’s knife. (In the first few minutes straight out of the oven, the dough is kind of soft from the heat, possibly giving you the false impression that you have a soggy tart. Let it sit on the rack just to shake off this initial soft stage and to recrisp and refirm, which it will.) Cut into wedges, and serve while hot.

    Fennel Al Forno 

    Ingredients:

    • 4 medium fennel bulbs, trimmed, a few fronds reserved for garnish
    • Salt and pepper
    • 3 tablespoons extra virgin olive oil, plus more for the baking pan
    • 1/2 teaspoon fennel seeds
    • 3 garlic cloves, smashed to a paste with a little salt
    • 1/2 teaspoon chopped rosemary, plus 2 teaspoons whole leaves
    • 1/8 teaspoon crushed red pepper
    • 8 ounces fresh mozzarella, sliced or shredded
    • 1/4 cup coarse dry bread crumbs, homemade from an Italian or French loaf
    • 1/2 cup grated Parmesan
    • 2 tablespoons chopped flat-leaf parsley, or a mixture of parsley and fennel fronds

    Instructions:

    1. Heat the oven to 375 degrees. Remove a thin layer of the fennel bulbs’ tough exterior. Cut the fennel crosswise into 1/2-inch slices.
    2. Bring a large pot of salted water to a boil. Add the fennel and boil for 1 minute, then drain and put it in a bowl of cold water to stop the cooking; drain and pat dry. Season the fennel with salt and pepper.
    3. Lightly oil a large baking dish. Layer in the fennel to a depth of 1.5 inches.
    4. In a small bowl, mix the olive oil, fennel seeds, garlic, chopped rosemary, and crushed red pepper. Drizzle 2 tablespoons of this mixture over the fennel. Sprinkle with the rosemary leaves. Cover with the mozzarella, then sprinkle with the bread crumbs. Drizzle the remaining oil mixture over the top, then sprinkle with the Parmesan.
    5. Bake the fennel, uncovered, for 20 to 25 minutes, until nicely browned. Garnish with the chopped parsley.

    Pickled Red Onions

    Ingredients:

    • 2 small red onions
    • 2 cups white vinegar
    • 2 cups water
    • 1/3 cup cane sugar (or FSO cane syrup)
    • 2 tablespoons sea salt
    • 2 crushed garlic cloves
    • 1 teaspoon mixed peppercorns

    Instructions:

    1. Thinly slice the onions (it’s helpful to use a mandoline), and divide the onions between 2 (16-ounce) jars or 3 (10-ounce) jars. Place the garlic and peppercorns in each jar.
    2. Heat the vinegar, water, sugar, and salt in a medium saucepan over medium heat. Stir until the sugar and salt dissolve, about 1 minute. Let cool and pour over the onions. Set aside to cool to room temperature, then store the onions in the fridge.
    3. Your pickled onions will be ready to eat once they’re bright pink and tender – about 1 hour for very thinly sliced onions, or overnight for thicker sliced onions. They will keep in the fridge for up to 2 weeks.

    The purple Osaka mustard greens in this week’s box are beautiful and versatile. Enjoy them raw in salads or braise and pair with pork, lamb and sausages, creamy sauces, pungent cheeses, peaches, dill, fennel, cilantro, the list goes on and on. We especially love these greens cooked with our FSO bacon and a splash of apple cider vinegar – perfection! Prefer saving this taste of spring for summertime? Check out our pickled greens recipe below.

    Parsley’s another seasonal offering. It’ll keep in the fridge for about a week if wrapped loosely in dampened paper towels and placed in a resealable bag. We always recommend enjoying our veggies and herbs fresh, and parsley is no exception. It’s an excellent source of vitamins and minerals, antioxidants and phytonutrients. Dried parsley loses some of its magic but is still a healthy, tasty addition to any recipe. When possible, we prefer to slow dry our herbs. For parsley, group the sprigs into bundles. Use rubber bands to secure the stems. Hang the sprigs upside down in a warm, dry location. After a few weeks, your parsley will be brittle to touch and ready to store away.

    Don’t have time or space to slow dry? We’ve got you covered! Here’s a quick workaround: remove the stems and arrange the leaves on a paper towel-covered plate. Cover with another paper towel and microwave for around 40 seconds, followed by 20 second bursts until all moisture is removed. Grind into a powder using a mortar and pestle or a food processor, and store them in an airtight container.

    Finally, for those preparing an Easter feast next weekend, we’re sharing some inspiration for a pièce de résistance that will bring extra joy to your nearest and dearest. Bon appetit!

    Recipes

    Roasted Fennel, Chickpea and Kale Salad

    Ingredients:

    • 1 fennel bulb
    • ½ cup chickpeas
    • 3 garlic cloves, halved
    • 1tbsp freshly ground turmeric
    • sea salt
    • 2 tbsp olive oil
    • large bunch of curly kale
    • fresh coriander to garnish, optional

    Dressing

    • 1 tsp fresh ginger, peeled and grated
    • 2 tbsp olive oil
    • 1/4 lemon, juice
    • pinch of sea salt

    Instructions:

    1. Preheat the oven to 400F
    2. Cut fennel into 8 wedges, place into a bowl and toss with 1/2tbsp turmeric, sea salt and ½ tbsp olive oil. Place onto 1 side of a baking sheet.
    3. Drain chickpeas, pat dry and place into a bowl. Add garlic and toss with remaining turmeric, sea salt and ½ tbsp olive oil. Place onto a baking sheet next to the fennel. Bake for about 30min stirring in between.
    4. Tear kale leaves from the thick stems and wash thoroughly. Pat dry, place into a bowl and toss with sea salt and 1 tbsp olive oil. Spread onto a baking sheet and bake for about 10-15min stirring in between.
    5. Mix all of the ingredients for the dressing.
    6. Once everything is baked, toss together and drizzle with the salad dressing. If you like garnish with some chopped fresh coriander.

    Pickled Osaka Mustard Greens – adapted from saveur.com

    Ingredients:

    • ½ lb mustard greens
    • 2 tablespoons sugar
    • ¼ cup white vinegar
    • 1 tablespoon coarse sea salt
    • 3 serrano chiles, split lengthwise

    Instructions:

    1. In a small saucepan, combine 2 cups water, sugar, salt, and vinegar. Bring to a boil over high heat, then remove from heat. Cool slightly.
    2. Using a paring knife, trim stems of washed mustard greens from leaves. Cut stems into 2″ pieces and place in a 1-quart measuring cup. Coarsely chop enough greens to fill the measuring cup when added to stems and packed down gently.
    3. Pack stems, leaves, and chiles into a clean glass 1-quart jar. Pour hot liquid onto greens, making sure that the stems are completely submerged. Cover and refrigerate for at least 3 days before serving with spicy meat dishes, stir fry, or salads.

    Easter Leg of Lamb with Greens – adapted from marthastewart.com

    Ingredients:

    • ⅓ cup extra-virgin olive oil plus 1 tablespoon, for brushing
    • 1 fennel bulb, trimmed and finely chopped
    • 1 medium bunch scallions, white and most of the greens, thinly sliced (about 1 cup)
    • 1 tablespoon coarsely chopped garlic, plus 1 garlic clove, quartered
    • 1 ½ cups thinly sliced mustard greens and rainbow chard mix
    • 1 teaspoon fresh fennel frond
    • Freshly ground black pepper
    • ¼ cup chopped fresh mint
    • ½ cup crumbled feta cheese
    • 1 half leg of lamb (3 ½ to 4 pounds), semi-boned and butterflied (with shank bone)
    • Coarse salt
    • 1 teaspoon dried oregano, crumbled
    • ½ cup dry white wine, plus more if needed

    Instructions:

    1. In a large skillet, heat 1/3 cup olive oil over medium heat. Add fennel bulb, and cook, stirring occasionally, until just tender, about 3 minutes. Add scallions and chopped garlic, and cook for 2 minutes. Add greens, and cook, stirring, until wilted, 2 to 3 minutes. Remove from heat, and season with fennel fronds and pepper to taste. Stir in mint. Transfer to a bowl until cooled completely.
    2. Crumble feta cheese over cooled greens; stir to combine. Taste and adjust seasoning.
    3. Place lamb on a clean work surface. Season with salt, pepper, and 1/2 teaspoon oregano. Spread greens over lamb in an even layer. Roll lamb, starting at narrow end, to enclose filling. Using kitchen twine, tie lamb lengthwise and crosswise at 1-inch intervals. Rub with remaining tablespoon oil; season with salt, pepper, and remaining 1/2 teaspoon oregano. Cover, and refrigerate for at least 3 hours and up to overnight.
    4. Preheat oven to 450 degrees. Make four small slits in lamb, and insert the garlic quarters. Place the lamb in a roasting pan that just holds it comfortably. Roast for 25 minutes.
    5. Add wine, and reduce oven temperature to 400 degrees. Continue roasting, basting frequently with pan juices, 45 to 65 minutes (or until an instant-read thermometer inserted in the thickest part of the lamb registers 125 degrees for medium-rare). If the roasting pan becomes dry, add a little water or chicken stock.
    6. Remove lamb from oven, and cover with aluminum foil; let rest for 15 minutes. Remove twine from lamb before slicing. Strain pan drippings, skimming fat from the surface; drizzle pan juices over lamb.

    This week’s CSA share brings a rainbow of tasty nourishing items. First, the sweetest of the sweet, our white fleshed bonita sweet potatoes. These hardy tubers are delicious roasted with honey, cinnamon, and a pinch of salt and thyme. Add grated turmeric or galangal to step up the flavor and nutrition.

    Spring abundance is on full display with bok choy, chard, red butter lettuce, snow peas, and scallions. Enjoy our greens lightly sautéed or raw in salads. Add radishes for much more than flavor: they’re great at detoxifying the body as well as a host of other benefits. One satisfying crunch will help purify your blood and increase oxygen into your bloodstream. Raw radishes a bit much for your palette? We hear you. Here’s a tip: wash and salt the radish before steaming or baking for around 10 minutes. That should do the trick, less bitter, more spice.

    Turmeric is also one of nature’s best healers. Curcumin is what makes it a “functional food,” with health benefits far beyond basic nutrition.     Mushroom, Tomato, and Scallion Frittata – adapted from delish.com

    Ingredients:
    2 tbsp. olive oil
    12 scallions
    1/2 lb. shiitake mushrooms (can substitute other varieties)
    1 cup cherry tomatoes
    Salt and Pepper to taste
    8 eggs
    1/2 c. grated Parmesan cheese

    Instructions:
    1. Preheat oven to 350 degrees. Heat olive oil in a over medium heat. Add scallions, mushrooms, and 1/2 teaspoon salt; cover, and cook until the vegetables are very soft, about 15 minutes.
    2. In a large bowl, whisk together eggs and 1/4 teaspoon each salt and pepper. Pour egg mixture over the vegetables, add tomatoes, and stir for 2-4 minutes.
    3. Sprinkle cheese over the frittata, and bake in the oven for 15 minutes.

    Chinese Scallion Pancakes

    Ingredients:
    3 scallions—2 minced, 1 thinly sliced
    1 tablespoon plus 1 teaspoon toasted sesame oil
    1/2 teaspoon kosher salt
    1/2 pound of pizza dough, at room temperature
    2 tablespoons soy sauce
    1 tablespoon water
    2 teaspoons unseasoned rice vinegar
    1/2 cup canola oil

    Instructions:
    1. In a small bowl, mix the minced scallions with 1 tablespoon of the sesame oil and the salt.
    2. Cut the dough in half and roll out each piece to a 10-by-6-inch rectangle.
    3. Spread the scallion mixture over the dough, leaving a 1/2-inch border all around. Starting at a long edge, roll up each piece of dough and pinch to seal. Coil each roll of dough into a round and tuck the end under the coil. Cover and let stand for 15 minutes.
    4. In a bowl, mix the sliced scallion with the remaining 1 teaspoon of sesame oil and the soy sauce, water and vinegar.
    5. With a large, heavy rolling pin, roll out each dough coil into an 8-inch round. (It’s okay if some of the scallion mixture comes out; it will stick to the dough as you roll.)
    6. In a large skillet, heat the canola oil until shimmering. Fry one pancake at a time over moderately high heat, turning once, until golden, about 3 minutes total. Drain on paper towels. Cut the pancakes into quarters and serve with the soy dipping sauce.

    Roasted White Sweet Potatoes with Honey Cinnamon Glaze – adapted from nutmegnanny.com

    Ingredients:

    4 white sweet potatoes, scrubbed clean and cubed
    1/4 cup honey
    1/4 cup olive oil
    2 teaspoons fresh thyme leaves
    2 teaspoons cinnamon
    Kosher salt, to taste
    Black pepper, to taste

     Instructions:

    1. Preheat oven to 350 degrees and line a rimmed baking sheet with parchment paper, set aside.
    2. In a large bowl add cubed sweet potatoes and add in honey, olive oil, fresh thyme leaves, cinnamon, kosher salt, and black pepper.
    3. Stir to combine.
    4. Add to your prepared rimming baking sheet and roast for 25-30 minutes, stirring every 10 minutes.

    Watermelon Radish Salad with Orange and Goat Cheese – Rhubarbarians

    Ingredients
    • 2 medium navel oranges
    • 3 medium watermelon radishes, washed and thinly sliced
    • 1 Tbsp white vinegar
    • 1 Tbsp honey
    • salt and pepper
    • 6 Tbsp crumbled goat cheese
    • ½ cup roasted pistachios
    • 4 Tbsp chopped green onion

    Instructions

    1. Start by segmenting your oranges over a small bowl. Place segmented pieces aside and reserve 2 Tbsp of the orange juice.
    2. Toss the radish slices with the orange juice, vinegar, and honey. Season with salt and pepper and refrigerate for 30 minutes
    3. When radish slices have softened and mellowed to your liking, mix with the orange segments. Top with the goat cheese, pistachios, and green onion. Enjoy!

    Turmeric Orange Vinaigrette

    Ingredients
    • 2 tablespoons minced shallot
    • 1 teaspoon orange zest plus 2 tablespoons juice
    • 2 tablespoons apple cider vinegar
    • 2 tablespoons maple syrup
    • 2- inch section fresh turmeric, peeled and finely grated
    • 1/4 teaspoon sea salt, plus more to taste
    • 1/4 teaspoon ground cayenne pepper
    • 1/4 teaspoon freshly ground black pepper
    • 3 tablespoons extra virgin olive oil
    Instructions
    1. To make vinaigrette, whisk to combine shallot, orange zest and juice, apple cider vinegar, maple syrup, grated turmeric, sea salt, and spices. Whisking constantly, slowly add olive oil until mixture is pale and emulsified.

    Easy Fried Green Tomatoes Recipe – Pinch and Swirl

    I make these all the time as an appetizer or addition to sandwiches, yum! *Added for vegans how I would modify this recipe*

    Ingredients

    • 3 medium green tomatoes about 12 ounces
    • 1 large egg (*vegans can sub a flax egg – 1 tbsp ground flax seed to 3 tbsp water, let coagulate)
    • ½ cup buttermilk (*vegans make buttermilk by adding a splash of apple cider vinegar to plant milk, let sit)
    • ½ cup all-purpose flour divided
    • ½ cup cornmeal
    • 2 teaspoons kosher salt or 1 teaspoon fine salt
    • ½ teaspoon freshly ground black pepper
    • pinch ground cayenne pepper
    • avocado oil or other high vegetable heat oil, for frying
    • flaky sea salt such as Maldon, for finishing

    Instructions

    1. Slice tomatoes into ¼-inch thick rounds.
    1. Whisk egg and buttermilk together in a shallow bowl.
    2. Scoop ¼ cup flour onto a medium plate. 
    3. To a second medium plate add remaining flour, cornmeal, salt, pepper and cayenne; combine thoroughly with fork or small whisk.
    4. Dredge a tomato slice in plain flour, shaking off any excess; dip in egg mixture; dredge in cornmeal mixture until evenly coated and transfer to plate. Repeat with remaining tomato slices.
    5. Line a plate with paper towels; set aside.
    6. In a heavy skillet (ideally a cast iron skillet) heat ¼-inch of high heat oil to 375°. (It’s important for the oil to be very hot to keep tomatoes from absorbing it. Be sure to reheat between batches!) Carefully place tomatoes into hot oil and cook 1 ½ to 2 minutes per side, until golden brown. Transfer to paper towel lined plate (keeping tomatoes in a single layer so they don’t get soggy) and sprinkle with flaky sea salt. Repeat with remaining tomatoes. Serve hot.
