Experiencing the flu? Feeling achy? We grow turmeric at the farm. Turmeric is a diverse root akin to the ginger plant. The bright yellow color of turmeric is due to the curcumin in this root. You can utilize the root to give a colorful color to your rice, Asian,Thai or Indian dishes. Most recently, I used turmeric to make a delicious, healing chicken soup.
Ingredients: 2 ounce piece of tumeric (grated)
1 clove of finely chopped garlic
1 bunch of carrots
5 yams diced into 1 inch cubes
1 organic stewing chicken ( from the Farm)
1 bunch of celery diced
4 cups of water
Place all ingredients in a large stock pot.
Allow the soup to come to a rocking boil. Then lower the temperature to a simmer. The longer the soup is allowed to cook, the more opportunity there is for the wonderful nutrients to be disseminated into the soup. I left mine to simmer for 5 hours. Once, the meat is falling off the chicken. Remove the chicken from the pot. De boning the chicken. Return the meat to the pot. Skimming the fat off the top. Correct the seasoning. ( this means basically, taste the soup and see if you would need to add salt or pepper or any other seasonings. Allow the soup to simmer with the lid on.
Made too much? That’s okay. Laddle the soup into quart sized mason jars and freeze. It will always be available as a wonderful ,hearty, comfort food!
