Weekly Spring Share 3/6/2017

Spring is Here!!!

We have a bountiful harvest of fresh veggies to share with you this week, not quite sure how we are going to fit it all in the box for you, but rest assured you will receive it all along with an added bonus of our house made Strawberry Jam for being loyal frog song customers and a welcoming gift for our new members.Enjoy.

This Week’s Share Includes:

Napa Cabbage:  Originates from eastern Asia. The name Napa is a Chinese word  which translates roughly as “leaf”, It is a very popular ingredient in Asian chopped salads, Try one..

Asian Salad: chopped napa cabbage, sliced bell pepper, sliced scallions, chopped cilantro, chopped raw almonds, sesame seeds, can of chunk tuna, and dress with sesame oil and rice wine vinegar. Add an avocado if you have one. Makes a great salad as a meal dinner or lunch.

Rainbow Carrots: Steam, microwave, braise, boil, roast or bake. Versatile rainbow carrots love to show off their colorful good looks on fresh veggie trays and appetizer platters.

Rainbow Chard: Rainbow chard is great to sauté or stir-fry. For the most even cooking, remove the colored ribs/stems from the leaves and then chop the stems and start cooking them before you add the leaves. Sweet, tangy, and creamy things help tone down the mineral edge of the chard. A  little bit of balsamic vinegar, a squirt of lemon juice, creme fraiche or goat cheese are all fabulous with chard.

 Cilantro: Beyond its nutritional benefits, cilantro is a powerful, cleansing agent that specifically targets toxic metals that we are constantly exposed to such as aluminum, arsenic and cadmium. Diced cilantro leaves add a fresh taste to any dish, try it chopped up in some salsa or my favorite, sprinkled over Fish Tacos with a squeeze of lime.
Fennel: Fennel is crunchy and slightly sweet, adding a refreshing contribution to Mediterranean and Italian cuisine. Greek myths state that fennel was not only closely associated with Dionysus, the Greek god of food and wine, but that a fennel stalk carried the coal that passed down knowledge from the gods to men.
Panisse Lettuce: This bright green tender lettuce variety is perfect for a springtime salad tossed with a light vinaigrette or on top of a sandwich or burger.
Sugar Snap Peas: The french word Mangetout meaning “Eat Everything” refers to  a variety of garden pea in which the pod is also edible. like last weeks snow pea, they can be served raw, or lightly steamed, boiled or stir-fried.
Black Radish (Spicy):  Black radishes can be enjoyed raw (if you are up for the challenge) or cooked in a variety of different preparations. Sauté and braise to be served as a vegetable side dish. Cook like a turnip and smother in cream or butter. Dice and add to soups, stir-fries and stews to add a radishy bite.* You can eliminate the heat of this radish by cooking it. The black radishes are known to help fight off infection and promote healthy digestive function.
Tokyo Turnips: Tokyo turnips can  be enjoyed in a variety of ways… pickled, sautéed, or boiled in soups, serve them raw with a vegetable dip or throw them into a salad sliced or whole. Steaming and roasting turnips will bring out the best flavor and there is no need to peel these these beauties as their skin is really thin.

Crunchy Napa Cabbage Asian Slaw with Sugar Snap Peas, Radishes, Almonds and Cilantro.

You will Need:
1 head Napa cabbage (thinly sliced then coarsely chopped, about 3-4 cups shredded cabbage)
1 cup sugar pea (thinly and diagonally-sliced)
1 cup radishes (sliced into half-moon shapes)
1/2 cups green onions (sliced)
3/4 cups chopped cilantro (optional, but if you’re a cilantro fan I would use it)
 1/2 cups sliced almonds (toasted)
1 tablespoon white wine vinegar
1 tablespoon sugar
1 teaspoon soy sauce
1/2 teaspoons crushed garlic 
1/4 teaspoons sesame oil (Asian)
1/4 teaspoons ground ginger
1/4 teaspoons Sriracha (add more for extra heat)
1/3 cups mayonnaise/ light mayo
