Thai Inspired Potato Salad

While scanning our Instagram feed yesterday and I stumbled upon a delicious recipe from Chef Amy Rupert Secol using several ingredients from this weeks csa share, it’s like she read my mind.

Thai Inspired Potato Salad

Ingredients:

Steamed Potatoes

Chopped: Basil & Scallions

Diced Peppers

Shredded Carrots

Crushed Peanuts

Dressing:

Coconut oil

Apple cider vinegar

Local honey

Pineapple & Orange juice,

Orange zest

The smoked paprika came from our friends at @cultivateteaandspice

Cube potatoes and steam for about five minutes or until fork tender. Allow to cool. Toss with chopped basil, scallions, diced peppers, shredded carrots and crushed peanuts. Dress with a mixture of 2 parts coconut oil, 1 part apple cider vinegar, 1 part local honey,  and a little orange & pineapple juice. Season with salt and pepper, smoked paprika and fresh orange zest.
